Okay so I know when you think chocolate fudge you're not thinking that avocados would be on the ingredient list. And if it were on the ingredient list, you wouldn't think it would actually taste good. In fact, I was so baffled by this recipe I actually made it twice to make sure I wasn't crazy! Okay, confession, it wasn't because of that... it was because it tastes DAMN GOOD - SERIOUSLY! It's all about the avocodos! This recipe is mainly avocados, the [good] fat in the avocados is what gives this fudge recipe its fudginess! What makes this recipe even better is that it contains zero refined sugar. I substituted it with organic maple syrup. The nutrients found in maple syrup include energy, water, protein, fat, carbohydrates, and sugars. In terms of minerals, it contains calcium, iron, magnesium, phosphorus sodium, potassium, and zinc. Vitamins such as thiamin, riboflavin, niacin, and B6 are also found in maple syrup. Wow! Who knew ample syrup was so healthy!? What's even more impressive is that it contains antioxidants, it's boosts your immune system and it's good for your heart. All of these great health benefits that can provide a recipe a nice depth of sweetness really puts it on my top of refined sugar substitutes! Raw Avocado Chocolate Fudge Fudge: 3 medium Avocados 1/2 cup Maple Syrup 1/4 cup coconut oil (melted) 1/4 cup Unsweetened Cocoa 3 tablespoons Flaxseed (ground) 1 tablespoon Cinnamon 1 teaspoon salt Toppings: 1/4 cup chashews 1/4 cup chocolate chips Place the avocados, maple syrup and melted coconut oil in a blender and blend on high for one minute. This makes it rich and creamy. Add in the cocoa, flaxseed, cinnamon and salt and blend for another minute. At this point the mixture looks like mousse, light fluffy and really chocolatey! Take a 8x8 baking pan and line it with wax paper. Pour the mixture in and smooth it out. Now for the toppings! Chop up the cashews and sprinkle it along with the chocolate chips over the mixture. Then place it in the freezer for an hour. Once it is thoroughly chilled and the mixture has set, lift the mixture out of the pan simply by lifting the wax paper (easy peasy!) and cut the fudge into pieces. I like them bite size, it makes the perfect after-dinner indulgence without the guilt! Thanks for reading, I hope you try this recipe and love it like I do!
