     Healthy No-Bake Peanut Butter Power BrowniesEvery now and again there are days where I could use a little pick me up. Sometimes I'll grab a piece of fruit, chocolate or a handful of nuts. Sometimes I just crave sugar, calories and protein and when I do, these little power brownies keep me going. They are packed with protein from the peanut butter and who doesn't like peanut butter?! It is delicious and has many health benefits! The oats give you slow burning and long lasting energy. The cinnamon is your source of antioxidants and the chia seeds has your daily dose of omega 3s and 6s. These little suckers are perfect right out of the freezer! I keep a supply of them in there and when I'm in a hurry and need a boost, I pop a couple in my mouth and I'm ready for the next task at hand!  Health Benefits of Peanut Butter Suppresses Hunger For Weight Loss Eating peanuts and peanut butter helps control hunger without leading to weight gain. Your Heart Loves Peanuts Studies found peanuts lowered the risk of cardiovascular and coronary heart disease. Lowers Colon Cancer Eating peanuts and peanut butter may reduce colon cancer in women. Helps Protect Against Alzheimer’s Disease and Memory Impairment A study found that those getting the most niacin from foods were 70 percent less likely to develop Alzheimer’s disease. Peanuts are one of the foods highest in niacin.  Prevent Gallstones In two studies, individuals eating five or more servings of nuts per week had a 25 percent to 30 percent lower risk of getting gallstones compared to those who rarely or never ate nuts. Although peanuts are technically classified as a legume, they were considered nuts for these experiments, so peanuts are actually the most commonly consumed ‘nut’ in the world. Full of Healthy Fat All of the fat in peanut butter is heart-healthy monounsaturated fat. A study found that insulin-resistant adults who ate a diet high in mono-saturated fat had less belly fat than people who ate more carbohydrates or saturated fat.  Lowers Type 2 Diabetes Eating peanuts can reduce the risk of diabetes according to a study published in the Journal of the American Medical Association. High in Valuable Nutrition Peanut butter has protein as well as potassium — which lowers the risk of high blood pressure, stroke and heart disease. It also contains fiber for your bowel health, healthy fats, magnesium to fortify your bones and muscles, Vitamin E and antioxidants.  No-Bake Peanut Butter Power Brownies 1/2 cup Peanut Butter 1 cup Old Fashioned Oats 1/4 cup Cocoa 4 tablespoons Chia Seeds 2 tablespoons Cinnamon 1/4 cup Agave Nectar 1 pinch of Himalayan Sea Salt Place all ingredients into a medium mixing bowl and stir everything together. Then use parchment paper to place at the bottom of a 8x4in pan and cut the corners so that the paper lays flat. Pour the mixture into the pan with the parchment paper and spread evenly. Cover and freeze for one hour. After the power brownies are solidified, slip the parchment paper out of the pan (super easy clean up!) and cut the power brownies to the desired size. So of course with all this blueberry talk, this week's Life Food Nourish is featuring our superstar fruit - blueberries! What makes this blueberry muffin so great are of course the blueberries, but the oats as well. Oats are amazing, they are a gluten-free whole grain and a great source of important vitamins, minerals, fiber and antioxidants. Plus they keep you full longer and can help you lose weight! This recipe has zero refined sugar and is sweetened with just a bit of maple sugar. The blueberries add to the sweetness and gives the muffins a great gooey texture! I also substituted out milk for greek yogurt for that extra tanginess and protein.  Maple Sweetened Blueberry Muffins1 cup whole wheat pastry flour 1 cup old fashioned oats 2 teaspoons baking powder 3/4 teaspoon salt 2 teaspoon ground cinnamon 1/4 teaspoon baking soda 1/2 cup pure organic maple syrup 1 egg 1 cup greek yogurt 3 tablespoons unrefined coconut oil melted 1 teaspoon pure vanilla extract 11/2 cups blueberries (fresh or frozen) Pre-heat the oven to 400 degrees. Put the blueberries aside. Combine all dry ingredients and stir well. Then combine the wet ingredients in a separate bowl. Using an electric mixer, blend for about a minute. Pour about 1/4 of the dry ingredients into the wet ingredients and stir until the dry ingredients are wet, repeat with the remaining 3/4 of the dry ingredients 1/4 at a time. After the wet and dry ingredients have been fully combined, carefully fold in the blueberries. Grease the muffin pan and divide the batter amongst the cups. Add a pinch of cinnamon on top. Bake for approximately 15 mins and check with a toothpick!  These blueberry muffins are so good right out of the oven! The sweetness of the maple syrup and the gooey blueberries really make this a hit in our household! And as always, they are really yummy with a slab of organic butter! As many of you have encountered the same experience with your you own lovable furball, Misses Kisses (our resident cat & mascot) was spade and she didn't like it - not one bit! But it's at no fault to Affordable Animal Hospital, they treated her with care and love like we treat our own fur babies! From the moment we stepped in the door (sans cone of shame) to the minute we left (cone of shame fully intact around her furry head) Affordable Animal hospital took great care of her - and us too! We were a nervous bunch but they treated like we were their only patients and boy did we feel so much better! Here she is feeling "good" wearing her cone of shame...  Don't feel bad for her though, she was groggy the rest of the day but was up and moving around tormenting our other cat by the next day! Okay so I know when you think chocolate fudge you're not thinking that avocados would be on the ingredient list. And if it were on the ingredient list, you wouldn't think it would actually taste good. In fact, I was so baffled by this recipe I actually made it twice to make sure I wasn't crazy! Okay, confession, it wasn't because of that... it was because it tastes DAMN GOOD - SERIOUSLY!  It's all about the avocodos! This recipe is mainly avocados, the [good] fat in the avocados is what gives this fudge recipe its fudginess!  What makes this recipe even better is that it contains zero refined sugar. I substituted it with organic maple syrup. The nutrients found in maple syrup include energy, water, protein, fat, carbohydrates, and sugars. In terms of minerals, it contains calcium, iron, magnesium, phosphorus sodium, potassium, and zinc. Vitamins such as thiamin, riboflavin, niacin, and B6 are also found in maple syrup. Wow! Who knew ample syrup was so healthy!? What's even more impressive is that it contains antioxidants, it's boosts your immune system and it's good for your heart. All of these great health benefits that can provide a recipe a nice depth of sweetness really puts it on my top of refined sugar substitutes!  Raw Avocado Chocolate Fudge Fudge: 3 medium Avocados 1/2 cup Maple Syrup 1/4 cup coconut oil (melted) 1/4 cup Unsweetened Cocoa 3 tablespoons Flaxseed (ground) 1 tablespoon Cinnamon 1 teaspoon salt Toppings: 1/4 cup chashews 1/4 cup chocolate chips Place the avocados, maple syrup and melted coconut oil in a blender and blend on high for one minute. This makes it rich and creamy. Add in the cocoa, flaxseed, cinnamon and salt and blend for another minute. At this point the mixture looks like mousse, light fluffy and really chocolatey! Take a 8x8 baking pan and line it with wax paper. Pour the mixture in and smooth it out. Now for the toppings! Chop up the cashews and sprinkle it along with the chocolate chips over the mixture. Then place it in the freezer for an hour. Once it is thoroughly chilled and the mixture has set, lift the mixture out of the pan simply by lifting the wax paper (easy peasy!) and cut the fudge into pieces. I like them bite size, it makes the perfect after-dinner indulgence without the guilt!  Thanks for reading, I hope you try this recipe and love it like I do!
